BETA GLUCAN: is a long-chain polysaccharide consisting of interconnected glucose molecules. It is naturally found in the cell wall of baker's yeast (Saccharomyces cerevisiae), many edible fungi and cereals such as oats and barley. The origin of beta glucans also depends on the structure of its molecule, which can be linear or branched. Glucan codet from yeast and fungus glucose molecules are β-1.3-glycosid connection in the base chain, and the short support chains are connected by a β-1.6-glycosid bond which makes the molecule branched, while in beta glucans from oats and barge, glucose molecules are primitively linked linearly β-1.3 and β-1.4-glycosid bonds.
